Cream Cheese Frosting





Let your cream cheese and margarine soften and mix them with a fork. Yes, seriously. #forksovermixers



Add a splash a vanilla and some powdered sugar. Keep adding sugar until you're happy with the texture.

Potato donuts

I was wondering if I could put yeast donuts in the donut maker. Spoiler alert: they were delicious.



St. Patrick's Day is our patriarch's birthday, so every year my mother made potato donuts with green icing to celebrate. I hadn't had them in years, and there's no time like the present.

I used this recipe, substituting almond milk, margarine and aquafaba. You go through the whole process, until you get to the shaping bit.


Protip: use a tiny amount of dough, about half of what will fit in the wells. Otherwise they expand enough to prop open the donut maker and don't cook through.




I made a simple icing with powdered sugar and almond milk.



And now we know why you dye the icing.

Tiny donuts





1 cup AP flour

1/2 cup sugar

1 1/2 tsp baking powder

flavoring of choice*

1/2 cup unsweetened almond milk

1/2 tsp lemon juice

1 tsp vanilla

3 TBS aquafaba

1/4 margarine


Whisk together dry ingredients. Put wet ingredients in a measuring cup and microwave for 15 seconds. Stir and repeat until the margarine melts.



Protip: measure the margarine by displacement. It's called science.


Mix everything together and put in your donut maker. Five minutes worked for my machine.

They're best with cream cheese icing.





I really need to get cooking spray.






* I was feeling spice cake (note: I am always feeling spice cake) so I used 1/4 tsp ginger, nutmeg and allspice and 1/2 tsp cinnamon. Chocolate would also work.
